The biodynamic fruit was hand harvested from Summerhill Estate Vineyard. The juice was allowed to soak on the skins overnight with no temperature control before pressing. The wine fermented with ambient farm yeasts in a cool cellar, stopping on its own while still off-dry.
Opulent notes of ambrosia apple, candied grapefruit and sweet spice delight the senses. On the palate, this Gewürztraminer strikes a fine balance between richness and freshness with a soft mouthfeel and lifted acidity. The finish is long and savoury.
Try with bold, fragrant Szechuan dishes, candied yams or roasted Butternut squash.
