Wine Profile
Tasting Notes
Fresh quince leads the nose while celery leaf and floral notes shine through. The palate has a creamy softness with earthy hints of hay and yellow apple that lead to a zesty white-pepper finish.
Vineyard Notes
Grapes were hand harvested from estate-grown vines planted by Ari Cipes in 2011 at BC’s only certified Biodynamic vineyard.
Winemaker Notes
Grapes were destemmed, pressed and left to settle for 14 hours before being racked into stainless steel. Spontaneous fermentation occurred without temperature control. Based on Biodynamic principles, this wine was naturally fermented with ambient farm yeasts, truly reflecting the vintage and terroir of the Demeter certified Summerhill Vineyard in 2020.
Food Pairing Notes
A juicy, aromatic white for richly flavoured foods. Try with complex fare such as miso glazed sablefish, or something as simple as sour cream and onion potato chips!
