Tasting Notes
On the nose, Honeycrisp apple, white flowers and lime zest. The palate is fresh and vibrant with juicy green apple, pear, lemon meringue and a hint of toasted brioche.

Vineyard Notes
Grown in organic Okanagan vineyards especially suited for sparkling wine grape production.
Winemaker Notes
The grapes are whole cluster pressed and fermented dry in stainless steel before the cuvee is blended and bottled to undergo the second fermentation in the traditional method.

Straw coloured with medium intensity. The nose shows aromas of apple, lemon and vanilla. The wine is wel balanced with good mousse. Pleasing flavours of apple pear and citrus. Grapefruit and almonds on the lingering finish.

Superb value for a local bubbly that's nicely dry but has a lovely fruity nose with those Riesling grapes. Bought a bottle in Kelowna this summer, wish I bought a case! Will be scouting for you in Vancouver! Looking forward to it going 100% organic one day! Thanks Summerhill!

Most wines give me a headache (chemicals). This one is organic; no headache. When anyone asks me what I would like as a gift, I say 'Cipes Brut'. It is, hands down, my absolute favourite wine. Introduced to me by the 'Newcomers Club' brunch at Summerhill Winery. Hurrah!~

This wine went up against eight other sparkling wines in Rossland's Mountain Sips Wine Tasting Club. It came out as number one for its aroma and flavor complexity, balance of mousse and acidity and ability to initiate strange noises "mmm" "hmmm" "wow ummm" "yummm". Great sparkling wine for the value!

Fresh and dazzling with juicy yellow apples on the nose, opening up to a crisp and acidic Granny Smith Green and a toasty, warm finish.
Pairings: lemon rosemary chicken, buttery pastry (almond), hickory smoked potato chips
