Produced in the traditional method from the traditional grapes Pinot Noir, Chardonnay and Pinot Meunier, grown organically at Summerhill Estate Vineyard. These grapes were carefully selected with long a long sur lie bottle aging period envisioned. Our estate vines are situated in the North Okanagan on ancient, limestone-rich lake bottom silt soil especially suited to growing grapes for traditional method sparkling wine. This bottling is a testament to the unique and outstanding growing conditions of the site.
Extended en tirage aging for 18 years gave this vibrant wine time to mellow and harmonize. In the meantime it has become rich, mature and delicious while maintaining its freshness.
Intense aromas of honeyed yellow apple, caramel, toasted nuts and earthy umami. Enjoy incredible depth and feeling in every sip with flavours of marmalade, ginger, and key lime pie. Seashell minerality, ultra-creamy mousse, and mouthwatering acidity refresh the palate. This wine has layers of complexity that can only be come from 20+ years of bottle development.
