Tasting Notes
Fresh and vibrant primary fruit among the rich, mature, aged character.
Creamy lemon custard, warm brioche, candied orange, lemon zest, ripe apple, dried apricot, walnut, and ginger on the palate. This complexity, creaminess and opulent mouthfeel can only come with extended sur lie bottle aging.
Vineyard Notes
Estate grown at Summerhill Vineyard in Kelowna, BC. The grapes were picked with a long sur lie bottle aging period envisioned. Situated in the North Okanagan with WNW facing slopes on ancient limestone rich lake bottom silt soil, this vineyard is especially suited to growing grapes for traditional method sparkling wine, and this wine is a testament to the outstanding and unique growing conditions of the site.
Winemaker Notes
Crafted with care in the traditional method. This wine was aged 17.5 years in bottle on the lees before disgorgement in small batches began in September, 2019.
Food Pairing Notes
A beautiful accompaniment to baked oysters, Dungeness crab, and goat cheese in phyllo pastry.

Wow wow wow, this was one excellent bottle of bubbly! At the first sip I realized this was a serious wine. Incredible flavor, so well rounded. Now I see what you mean by a flavor that can only be delivered with age! Yum

I obtained a bottle of one of the first batches of the newly disgorged Ariel in late October, 2019. My wife and I had it with friends in January 2020 along with a bottle of the 1996 Summerhill Traditional plus a bottle of a well-known 1996 French sparkling ("P2"). In spite of being off the lees for only a month, the 2000 Ariel had already settled in nicely and was very clean and structured. Congratulations! Gord Richens, Cayman Islands
